Ingredients
  • [b]DRESSING INGREDIENTS[/b]
  • [br]
  • 1 clove garlic
  • Kosher salt, to taste
  • 4 Tablespoons olive oil
  • 1 Tablespoon. fresh lemon juice
  • 1/2 Tablespoon Dijon mustard
  • 1/2 shallot, minced
  • Freshly ground black pepper, to taste
  • [b]SALAD INGREDIENTS[/b]
  • [br]
  • 3 cups mixed greens, washed and dried
  • 1 tomato, quartered
  • 1/2 cucumber seeded and chopped
  • 1/2 cup Manzanilla olives
  • 1 can solid white Albacore tuna, drained
  • 2 soft hard-boiled eggs, sliced into quarters
  • 2 tablespoons capers
Instructions
  1. In a small bowl, whisk mustard, olive oil and vinegar until smooth. Set aside.
  2. Arrange greens then place tomatoes, cucumbers, onions, olives individually around the outside.
  3. Add tuna on top.
  4. Place hard-boiled egg quarters on the side and sprinkle salad with capers
  5. Drizzle mustard dressing over salad and serve immediately.

So what.  I didn’t use the nicoise olive.  It doesn’t matter.  I didn’t have any.  And guess what? The salad rocked!

My Kona rocks it too.

KonaShe is such a precious dog.  This morning as we were all getting ready for the day, she sat at the end of the hallway.  The bedroom door was closed as the hubby was getting dressed.  I was in the kitchen (no surprise there).  But Kona had a bird’s eye view of the door and me.  This way she can make sure I am still here and be damn sure she doesn’t miss out when the bedroom door opens and hubby appears.

Sorry to digress a bit about my Kona, but she is just the cutest, smartest, most adorable dog ever.

This protein-rich Nicoise Salad originated from Provence, France and is a fancy way to enjoy tuna salad.Anyway, back to this salad.  I just discovered that pickles and olives are basically zero in the low carb  meal plan world.  I love olives and I don’t mind a sour dill or pickle spear every now and then.

Do you know that I have gone 10 days in a row without any type of sugar, baked goods, grains or bread?  I don’t miss it per se.  I just wonder hold long it will be before I take a little splurge.
